The Scoville scale is a universal measure of the hotness of a chili pepper, named after its creator, Wilbur Scoville, an American chemist. The scoville rating is a range due to expected variation within each species. The higher the number the hotter the chili.
Hot Chili Peppers are a staple in many countries around the world, Peru is no exception, being one of the first areas to cultivate the hot vegetable. While the local ají pepper is the certainly the most popular in northern Peru, Rancho Bravo plans to introduce international favorites; jalapeños, habanero and "Penne de Mono" to local chili lovers.
