Lettuce is a fairly hardy, cool-weather vegetable that thrives when the average daily temperature is between 60 and 70°F and is most often grown as a leaf vegetable. In Western countries, it is typically eaten cold and raw. In some places, including China, lettuce is typically eaten cooked and the use of the stem is as important as use of the leaf.

Romaine: Romaine has a more distinctive taste than most other lettuces with a very faint bitter quality. It forms an upright, elongated head and is an excellent addition to salads and sandwiches.

 

 

Wall: Wall lettuce has slender dark green leaves with silky sheen and a slightly reddish tinge.
 
Salad Bowl: Forms a large, fast-growing rosette of light-green, wavy, deep-notched leaves. It has remained a favorite due to its rapid growth and refusal to turn bitter in hot weather.
 
Red: Red lettuce is similar to salad bowl but contains anthocyanins which is an antioxidant and creates the red pigmentation.
 
Nancy: Nancy has thick but soft and tender leaves forming a cream colored, soft, blanched heart. Are rarely bitter, quick maturing, more tolerant of less than ideal soil and weather conditions than other varieties.
